Mastering the art of the Sunday roast comes down to one critical calculation: getting the timing and temperature right. If you are working with a 1.5 kg pork roast (roughly 3.3 lbs), you are holding the goldilocks size of meat—large enough to feed a hungry family of 4 to 6, yet compact enough to cook evenly without drying out.
Whether you are dreaming of ultra-juicy meat with shattering, glass-like crackling or a melt-in-your-mouth slow-cooked shoulder, here is your complete guide to cooking a 1.5 kg pork roast to perfection.
1. The Golden Rule of Timing (By Cut)
Pork isn’t a one-size-fits-all meat. The exact cooking time for a 1.5 kg roast depends heavily on the cut you bought:
- Pork Loin or Leg (With Crackling): ~1 hour 30 minutes to 1 hour 45 minutes total (using a high-heat start).
- Boneless Pork Loin (Rolled): Roughly 40 to 44 minutes per kg, plus an extra 20 minutes. For 1.5 kg, expect about 1 hour 15 minutes to 1 hour 30 minutes at 180°C (350°F).
- Pork Shoulder / Butt (For Pulled Pork): This cut needs “low and slow” magic. Plan for 3 to 4 hours at 160°C–170°C (325°F), or 6 to 8 hours on LOW in a slow cooker.
2. The Foolproof Method: Crispy Crackling & Juicy Loin
If your 1.5 kg roast is a loin or leg cut with the skin (rind) on, use this classic two-stage blast method to achieve restaurant-quality crackling.
Step 1: Prep Like a Pro (Crucial for Crackling)
- Dry it out: Unwrap the pork and pat the skin completely dry with paper towels. If you have time, leave it uncovered in the fridge overnight. Moisture is the absolute enemy of crispy crackling.
- Score the skin: Use a sharp utility knife or razor blade to score diamond or parallel lines into the fat. Cut through the skin and fat layer, but avoid cutting into the actual meat, or the juices will escape and sog up your skin.
- Oil and salt: Rub a little olive oil or vegetable oil into the scores, then massage coarse sea salt generously into every nook and cranny.
Step 2: The Blast & Bake (The Timeline)
- Bring to room temp: Let the pork sit on the counter for 30–45 minutes before putting it in the oven.
- Stage 1 (The High Heat): Preheat your oven to a blistering 230°C to 240°C (450°F to 475°F). Roast your 1.5 kg joint uncovered for 30 minutes. This high heat triggers the fat to render and bubbles up the skin into glorious crackling.
- Stage 2 (The Slow Cruise): Drop the oven temperature down to 180°C (350°F). Cook for the remaining time—roughly 1 hour to 1 hour 15 minutes for a 1.5 kg piece.
3. How to Know It’s Done (The Temperature Test)
Forget guessing games or cutting into the meat to peer inside (which lets all the precious juices run out). Use a digital meat thermometer inserted into the thickest part of the roast:
- For tender, slightly pink, juicy pork (Recommended): Pull it out when the internal temperature hits 63°C to 65°C (145°F to 150°F).
- For fully well-done pork: Target 71°C (160°F).
Note: Carryover cooking will raise the internal temperature by another 3°C to 5°C while it rests.
4. Don’t Skip the Rest!
Transfer your 1.5 kg roast to a warm carving board, loosely tent it with a piece of aluminum foil, and let it rest undisturbed for 15 to 20 minutes. This allows the muscle fibers to relax and redistribute the moisture evenly throughout the roast. Carve it too early, and you’ll end up with a dry roast on the board instead of juicy slices on your plate.
